Former Health Inspector · Las Vegas Valley

Helping Las Vegas's family restaurants stay inspection-ready

Education, not intimidation

Food safety shouldn't be about being told something is wrong. It should be about understanding why it matters, how to correct it, and how to prevent it from happening again.

  1. Walk-through

I look at your kitchen the way an inspector does, so nothing on inspection day is a surprise.

  2. Written plan

You get a plain-language report within 48 hours: what I found, why it matters, and how to fix it.

  3. Fix it together

I help you and your team make the corrections stick, so the same problem doesn't come back.

Family restaurants are the heart of this city

You're running the restaurant, managing employees, serving customers, and handling a dozen other things every day, without a corporate compliance department behind you. You shouldn't have to figure out food safety alone.

Your restaurant is more than a business: it's years of hard work and a reputation built in the community. My job is to help you protect it with practices that are practical, understandable, and sustainable.

  • Independent & family-owned restaurants
  • Asian & Latino family kitchens
  • Food trucks
  • Ghost kitchens
  • New openings

Both sides of the table

I've experienced food safety from both sides of the table: as a regulatory professional evaluating compliance, and as a quality professional building systems that work in real kitchens.

Before consulting, I worked in food manufacturing and quality management: GMPs, audits, and the corrective actions that keep problems from coming back. That background is why my plans work on a busy line, not just on paper.

The numbers behind your grade card

Three SNHD rules every Las Vegas kitchen should know cold.

A = 0–10

An A grade means 10 demerits or fewer on your SNHD inspection. B is 11–20, C is 21–40.

What the grade card means →
15 days

After a downgrade, SNHD schedules your re-inspection after 15 business days. The clock matters, and so does what you do with it.

What happens after a downgrade →
41°F

The cold-holding limit most kitchens miss: SNHD's own study found 65.7% of restaurants out of compliance on it.
