Both sides of the table
Former health inspector. Food manufacturing and quality professional. On your side.
I have experienced food safety from both sides of the table: as a regulatory professional evaluating compliance and as a quality and food safety professional working to implement effective systems in real-world operations.
In plain terms: I've been the inspector grading kitchens, and I've been the quality professional getting kitchens ready to be graded. Sitting in that second seat taught me something the first seat never could. A rule only works when the people following it understand why it exists. That's the idea this whole practice is built on.
Education, not intimidation
My approach is built around education and partnership. Food safety shouldn't be about telling an owner that something is wrong. It should be about helping them understand why it matters, how to correct it, and how to prevent it from happening again.
I believe people are more likely to follow food safety practices when they understand the reason behind them.
That belief has a shape. Every finding I write up, every training session I run, and every plan I build follows the same four steps:
-
Explain
I show you exactly what I found, in plain language your whole team can act on. No citation-speak.
-
Educate
You learn why it matters: what the rule protects, and what the inspector is trained to look for.
-
Correct
We fix it together, with steps that hold up on a busy Friday night, not just on paper.
-
Prevent
We build the habit, the log, or the system that keeps it from coming back.
Explain · Educate · Correct · Prevent
The experience behind the advice
My career spans both regulation and industry. Here is the work I've actually done, plainly listed:
- Public health and regulatory inspections
- Food safety and regulatory compliance
- Quality assurance and quality management
- Food manufacturing and production
- Sanitation and Good Manufacturing Practices (GMPs)
- HACCP and preventive food safety systems
- Food safety audits and assessments
- Corrective and preventive actions
- Documentation and recordkeeping
- Employee education and food safety training
The manufacturing and quality side matters more than it might sound. It means I've lived with the systems I recommend, not just checked them against a form. If a procedure is too complicated for a real crew on a real shift, it isn't a good procedure.
Family-owned restaurants are the heart of many communities
You're running the restaurant, managing employees, serving customers, ordering supplies, dealing with vendors, and handling dozens of other responsibilities every day. You shouldn't have to figure out food safety alone.
I understand that you may not have a large corporate compliance department or a dedicated food safety professional. That is exactly who I built this practice for.
- Independent & family-owned restaurants
- Food trucks
- Ghost kitchens
- New openings
- Small food producers
Independent, and clear about it
My role is not to replace your regulatory agency or conduct a government inspection. My role is to provide an independent, educational perspective that helps you identify potential concerns, strengthen your food safety practices, and become better prepared for regulatory inspections and audits.
I don't work for the Health District anymore. I work for you. What I bring is the knowledge, not a shortcut. Nobody can guarantee you a grade, and you should be wary of anyone who says otherwise. What I can promise is preparation: when the inspector arrives, nothing on that report should be a surprise.
Protect what you've built
Your restaurant represents more than a business. For many families it represents years of hard work and a reputation built in the community. My goal is to help you protect that investment with food safety practices that are practical, understandable, and sustainable.
The first step is a free walk-through of your kitchen. No charge, no pressure, and an honest answer about what you need and what you don't. Send me a message through the contact form and tell me a little about your restaurant. I personally reply to every message within 2 business hours, Monday to Saturday, 8am to 6pm.
Let's make your food safety program stronger, simpler, and more effective.
Free, no pressure, at your restaurant. If you don't need help, I'll tell you.
